Bitter

A brewer here in Chicago doesn't need water from the Czech Republic to make a good pilsner.

A brewer in California doesn't have to dig a well in Burton-on-Trent to make an English-style pale ale.

Modern water treatment lets brewers manipulate their local water or start with the low mineral water and build something appropriate for the beer they're trying to make.

For centuries, water helped determine regional beer.

But Bitter is also a style that I think just doesn't get the love it deserves because of the name.

And I think that's the main reason people don't buy these is because it's called a Bitter.

But in reality, it's like less bitter than American beers or whatever.

Like the standard that we, pale ale, right? Like if you ordered an American pale ale, I would expect that to be more bitter than this.
