Oh, okay

... something that's happened quite a bit recently in Salers specifically, also in a neighboring, uh, region in the Grand Aubrac.

Similarly to the Comté/Salers difference, Salers is the summer version.

Comté is the historic sort of blanket term.

Laguiole.

Okay.

Um, and so Laguiole producers make Laguiole, but in the summer when they have their cows at pasture, they make a cheese called Laguiole Grand Aubrac, and they similarly stopped making that cheese, um, a couple of summers ago briefly, um, because of heat.

It's so scary.
