And she went really, really hard on heritage grains, 'cause it's something that they work with a lot at Coomb's Head.

Mm.

Um, she used to work at a bakery called Quince, which is fantastic.

And there's basically-

... now in the UK a really big push to kind of reintegrate heritage grains.

So, like, these are grains that were kind of, uh, used before intensive scientific plant breeding-
